Some companies charge the total amount after the pickup and pay drivers themselves.
If you are a business, you can pay with company check on delivery to the driver, but most probably drivers will not accept personal check.
Hey, Bobby! You have to be very cautious with low quotes from some companies. That's a standard scheme of bait and switch. The company you are working with has to set the right expectation from the beginning. They can try and might be lucky to get a driver for a low cost, but odds are not in your favor. All drivers use CentralDispatch as a loadboard and pick the most paying loads first.
So to make it simple – Yes, the price can change, you have to be prepared to add an extra $100 or $200 to get drivers’ attention. Be aware of the companies that give you low quotes and try to work with brokers who are trying to educate the customer, not make extra hundred bucks by scamming people right and left.

Yes, and no. In accordance with carriers’ license, they are not able to ship household items inside of the car. In addition, carriers have to control the overall weight of their truck, trailer, and vehicles on the trailer. They might get fined for overweight by local authorities.
In fact, most of the drivers are ok with no more than 100 lbs inside of the car. You can put a couple of suitcases or some household items into the trunk of below windows level.
Some drivers might ask for an extra $25-$100 to ship more, some not. It would be better to negotiate it when the driver is on the pickup location. You can also notify your broker about extra items, they can negotiate with the driver on your behalf.
